Looking for an easy breakfast to grab on your way out? Look no further than these healthy and delicious breakfast bars!
They are super filling and super easy to make. The bars take about 25 minutes to prepare, and then 3 hours to set.
Ingredients:
1 cup rolled oats
½ cup coconut flakes
½ cup dried cranberries
¼ cup flour
½ cup dried date nuggets
⅓ cup cashews, chopped
3 tablespoons flax seeds
¼ teaspoon sea salt
½ cup almond butter
2 tablespoons coconut oil, melted
2 tablespoons raw honey
1 teaspoon vanilla extract
Line an 8×8 pan with wax paper or tin foil. Combine the oats, coconut flakes, cranberries, date nuggets, cashews, flax seeds, and sea salt in a large bowl. In a smaller bowl, whisk together the almond butter, coconut oil, honey, and vanilla extract. Fold the wet ingredients into the dry and stir together. Spoon the batter into the pan and press down until firm. Refrigerate for 3 hours, then cut into 8 bars and enjoy!
A few notes:
Craisins can be substituted for dried cranberries.
Oat flour can be used instead of wheat flour for more moist bars.
For the best results, keep the bars in the refrigerator. Otherwise, they’ll become dry and crumbly.
